    Cook the Noodles

    Bring a large pot of salted water to a boil. Add the chow mein noodles and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Sauce

    In a small bowl, mix together soy sauce, oyster sauce, sesame oil, cornstarch, and water until well combined. Set aside.

    Sauté Shrimp

    In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add the shrimp and season with salt and pepper. Cook for 2-3 minutes, or until the shrimp turn pink and opaque. Remove shrimp from the skillet and set aside.

    Stir-Fry Vegetables

    In the same skillet, add a bit more oil if needed. Add minced garlic and ginger, and sauté for about 30 seconds until fragrant. Add bell pepper, carrot, and green onions. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

    Combine Everything

    Return the cooked shrimp to the skillet. Add the cooked chow mein noodles and the prepared sauce. Toss everything together and cook for another 2-3 minutes until heated through and well coated with sauce.

    Add Bean Sprouts

    Finally, add the bean sprouts and toss gently for another minute. Adjust seasoning with additional salt and pepper if necessary.

Serving

    Serve Hot

    Remove from heat and serve the shrimp chow mein immediately. Garnish with additional green onions if desired.
