Preparation

  1. 1

    Prep the Ingredients

Start by washing and preparing all the vegetables. Slice the bell pepper, julienne the carrot, and slice the mushrooms. Chop the green onions and set aside.

  2. 2

    Marinate the Shrimp

In a bowl, combine the shrimp with a tablespoon of soy sauce, salt, and black pepper. Let it marinate for about 15 minutes.

Cooking

  1. 3

    Make the Sauce

In a small bowl, mix together the remaining soy sauce, cornstarch, chicken broth, sesame oil, minced garlic, and minced ginger. Stir until the cornstarch is dissolved and set aside.

  2. 4

    Stir-Fry the Vegetables

Heat a large wok or skillet over medium-high heat. Add a tablespoon of sesame oil, then add the sliced bell pepper, julienned carrot, snow peas, and sliced mushrooms. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.

  3. 5

    Cook the Shrimp

Add the marinated shrimp to the wok with the vegetables. Cook for another 3-5 minutes until the shrimp turn pink and are cooked through.

  4. 6

    Combine and Thicken

Pour the sauce mixture over the shrimp and vegetables. Stir well to combine and cook for an additional 2-3 minutes until the sauce thickens.

  5. 7

    Garnish and Serve

Remove from heat, sprinkle with chopped green onions, and serve hot over rice or noodles.
