Prepare Rice

    Rinse the Rice

    In a fine mesh strainer, rinse the white rice under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for about 18 minutes or until the water is absorbed and the rice is tender. Remove from heat and let it sit covered for 5 minutes.

Sauté Vegetables

    Chop the Vegetables

    While the rice is cooking, chop the bell pepper, carrot, zucchini, and broccoli into bite-sized pieces. Mince the garlic.

    Heat Olive Oil

    In a large skillet, heat 2 tablespoons of olive oil over medium heat.

    Sauté Garlic

    Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant, being careful not to burn it.

    Cook the Vegetables

    Add the chopped bell pepper, carrot, zucchini, and broccoli to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.

    Season the Vegetables

    Pour in the soy sauce and sprinkle with salt, black pepper, and red pepper flakes. Stir well to combine and cook for an additional 2 minutes.

Serve

    Plate the Dish

    Fluff the cooked rice with a fork and divide it among serving plates. Top with the sautéed mixed vegetables.
