Preparing Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine-mesh sieve and rinse under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a rice cooker or a pot, combine the rinsed sushi rice and water. Cook according to the rice cooker's instructions or bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow it to cool to room temperature.

Preparing Fillings

    Slice the Salmon

    Using a sharp knife, slice the fresh salmon into thin strips, about 1/2 inch wide.

    Prepare the Avocado

    Cut the avocado in half, remove the pit, and scoop the flesh out with a spoon. Slice the avocado into thin strips.

    Prepare the Cucumber

    Peel the cucumber if desired, then slice it into thin strips.

Assembling the Roll

    Prepare the Rolling Mat

    Place a bamboo sushi mat on a flat surface and cover it with plastic wrap to prevent sticking.

    Lay the Nori Sheet

    Place a nori sheet, shiny side down, on the prepared bamboo mat.

    Spread the Rice

    Wet your hands to prevent sticking and take a handful of sushi rice. Spread it evenly over the nori, leaving about 1 inch at the top edge.

    Add Fillings

    Place strips of salmon, avocado, and cucumber along the bottom edge of the rice-covered nori.

    Roll the Sushi

    Using the bamboo mat, roll the sushi away from you, pressing gently but firmly. Continue rolling until the entire nori sheet is rolled up.

    Seal the Roll

    Wet the top edge of the nori with a little water to help seal the roll.

    Slice the Roll

    Using a sharp knife, slice the roll into bite-sized pieces. Wipe the knife with a damp cloth between cuts for clean edges.

Serving

    Garnish and Serve

    Sprinkle sesame seeds on top of the sushi rolls. Serve with soy sauce and wasabi on the side.
