Cook Noodles
Bring a pot of water to a boil. Add the Lo Mein noodles and cook according to package instructions until al dente, usually about 5-7 minutes. Drain and set aside.

Prepare Pork
Slice the pork tenderloin into thin strips. In a bowl, combine the sliced pork with soy sauce and cornstarch. Toss to coat and let marinate for 15 minutes.

Stir-fry Pork
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated pork and stir-fry for about 5-7 minutes, or until the pork is cooked through and no longer pink. Remove from the skillet and set aside.

Sauté Vegetables
In the same skillet, add another tablespoon of vegetable oil. Add the minced garlic and ginger, cooking until fragrant (about 30 seconds). Then add the bell pepper, carrot, and snow peas. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.

Finish with Green Onions
Add the sliced green onions to the skillet and toss again. Remove from heat.
