Prepare the Pork
Season the pork chops with salt and black pepper on both sides.

Sear the Pork Chops
In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the pork chops and sear for about 4-5 minutes on each side until golden brown. Remove from skillet and set aside.

In the same skillet, add another tablespoon of vegetable oil. Add the minced garlic, sliced bell pepper, carrot, onion, and chopped celery. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

In a small bowl, mix the soy sauce, oyster sauce, cornstarch, and chicken broth. Pour this mixture over the vegetables in the skillet and stir well.
