Marinating Chicken

    Prepare Chicken

    Cut the chicken breast into bite-sized pieces.

    Marinate Chicken

    In a mixing bowl, combine the chicken pieces with soy sauce, cornstarch, and sesame oil. Allow to marinate for at least 30 minutes.

Cooking Rice

    Rinse Rice

    Rinse the white rice under cold water until the water runs clear. This helps to remove excess starch.

    Cook Rice

    In a pot, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until the water is absorbed.

Stir-Frying

    Prepare Vegetables

    Chop the red and green bell peppers into bite-sized pieces. Mince the garlic and ginger, and slice the green onions.

    Heat Oil

    In a large wok or frying pan, heat peanut oil over medium-high heat.

    Cook Chicken

    Add the marinated chicken to the hot oil and stir-fry for about 5-7 minutes until the chicken is golden and cooked through.

    Add Vegetables

    Add the chopped bell peppers, dried red chili peppers, garlic, and ginger. Stir-fry for another 3-4 minutes.

    Finish Sauce

    Stir in soy sauce, rice vinegar, sugar, and roasted peanuts. Mix well and cook for an additional 2 minutes.

    Serve

    Serve the Kung Po Chicken over the cooked white rice and garnish with sliced green onions.
