Cut the Chicken
Cut the boneless, skinless chicken breasts into bite-sized pieces.

Marinate the Chicken
In a medium bowl, combine 2 tablespoons soy sauce, rice wine vinegar, cornstarch, and sesame oil. Add the chicken pieces, toss to coat, and let marinate for at least 30 minutes.

Prepare the Sauce
In a small bowl, mix together 3 tablespoons soy sauce, chili paste, sugar, and chicken broth. Set aside.

Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until cooked through, about 5-7 minutes. Remove from skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add minced garlic, minced ginger, diced bell pepper, and zucchini. Sauté for 3-4 minutes until vegetables are tender.

Return the cooked chicken to the skillet with the sautéed vegetables. Pour the sauce over the mixture and stir to combine. Add chopped green onions and peanuts, cooking for an additional 2-3 minutes until heated through.
