For the Hunan Tofu

    Prepare the Tofu

    Drain the tofu and press it between paper towels to remove excess moisture. Cut it into cubes.

    Cook the Tofu

    In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the cubed tofu and cook until golden brown on all sides, about 8-10 minutes. Remove the tofu from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and ginger, and sauté for 1-2 minutes until fragrant. Add diced bell pepper and julienned carrot, and stir-fry for about 5 minutes until the vegetables are tender but still crisp.

    Combine Ingredients

    Return the cooked tofu to the skillet. In a small bowl, mix soy sauce, Hunan chili sauce, cornstarch, and water. Pour this mixture over the tofu and vegetables. Stir well to coat everything.

    Simmer

    Cook for an additional 5-7 minutes, stirring occasionally, until the sauce thickens. Season with salt and black pepper to taste. Finally, garnish with sliced green onions before serving.

For the White Rice

    Rinse the Rice

    Rinse the white rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a pot, combine the rinsed rice, water, and salt. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover the pot, and simmer for 15-20 minutes until the rice is tender and water is absorbed.

    Fluff the Rice

    Remove the pot from heat and let it sit, covered, for 5 minutes. Then, fluff the rice with a fork before serving.
