Rice Preparation

    Cook the Rice

    In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of white rice, stir, and reduce heat to low. Cover and simmer for about 18-20 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

    Prepare the Vegetables

    Wash and chop all vegetables as indicated in the ingredient list. Make sure to cut the broccoli into small florets, slice the carrot and red bell pepper, and trim the snow peas. Set all prepared vegetables aside.

Sauce Preparation

    Make the Sauce

    In a small bowl, combine 3 tablespoons of soy sauce, 1 tablespoon of chili paste, 2 minced garlic cloves, 1 tablespoon of minced ginger, 1 teaspoon of sesame oil, 1 teaspoon of cornstarch, and 2 tablespoons of water. Mix well until the cornstarch is dissolved and set aside.

Cooking the Vegetables

    Stir-Fry the Vegetables

    In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the prepared broccoli, carrot, red bell pepper, snow peas, and mushrooms. Stir-fry for about 5-7 minutes or until the vegetables are tender-crisp.

    Add the Sauce

    Pour the prepared sauce over the stir-fried vegetables and add the chopped green onions. Stir well to coat all the vegetables with the sauce. Cook for an additional 2-3 minutes until the sauce thickens slightly.
