Prepare the Chicken
Cut the chicken breasts into bite-sized pieces and season with salt and black pepper. In a bowl, mix the soy sauce, Hunan chili paste, minced garlic, and minced ginger to create a marinade. Add the chicken to the marinade and let it sit for at least 15 minutes.

Cook the Chicken
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the marinated chicken and stir-fry for about 5-7 minutes until the chicken is cooked through and no longer pink. Remove the chicken from the skillet and set it aside.

Combine Chicken and Vegetables
Return the cooked chicken to the skillet with the vegetables. Stir in the chicken broth and bring to a simmer. In a small bowl, mix the cornstarch with a little water to create a slurry, then add it to the skillet to thicken the sauce. Cook for another 2-3 minutes until the sauce is thickened.

Garnish and Serve
Remove the skillet from heat and stir in the chopped green onions. Serve the Hunan chicken hot over white rice.

Rinse the Rice
Rinse the white rice under cold water until the water runs clear to remove excess starch.

Cook the Rice
In a pot, combine the rinsed rice, water, and salt. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and simmer for about 18-20 minutes, or until the water is absorbed and the rice is fluffy.
