Preparation
- 1
Cleaning the Shrimp
Begin by cleaning the fresh shrimp. Rinse them under cold water to remove any impurities.
- 2
Peeling and Deveining
Carefully peel the shrimp, removing the shell while leaving the tail intact for presentation. Next, devein the shrimp by making a shallow cut along the back and removing the dark vein.
- 3
Marinating the Shrimp
In a small bowl, combine the lemon juice and soy sauce. Add the cleaned shrimp and let them marinate for about 10 minutes in the refrigerator to enhance their flavor.

Plating the Sashimi
Once the shrimp have marinated, arrange them neatly on a chilled plate. You can fan them out in a circular pattern or lay them side by side.
- 5
Adding Accompaniments
Add small dollops of wasabi paste and a portion of pickled ginger on the side of the sashimi for flavor.
- 6
Garnishing
Sprinkle microgreens or shiso leaves over the shrimp for a fresh touch. Optionally, sprinkle sesame seeds for added texture.
