Preparing Sushi Rice

Rinse and Cook Rice
Rinse the sushi rice under cold water until the water runs clear. In a rice cooker, combine the rinsed rice and water. Cook according to the rice cooker instructions or until the rice is tender and water is absorbed.

Season the Rice
Once the rice is cooked, transfer it to a large bowl. In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Pour this mixture over the rice and gently fold to combine. Allow the rice to cool to room temperature.
Preparing Crab Filling

Mix Filling Ingredients
In a bowl, combine the imitation crab meat (shredded), cream cheese (softened), chopped green onions, mayonnaise, and lemon juice. Mix until well combined and set aside.
Assembling and Rolling

Prepare Rolling Area
Lay a bamboo sushi mat on a flat surface and place a sheet of plastic wrap on top of it. Place one nori sheet, shiny side down, on the plastic wrap.

Spread Rice
Wet your hands with water to prevent sticking. Take about 1 cup of sushi rice and spread it evenly over the nori, leaving about an inch at the top edge.

Add Filling
Spoon a portion of the crab filling across the middle of the rice-covered nori.

Roll the Sushi
Using the bamboo mat, start rolling the sushi away from you, applying gentle pressure to form a tight roll. Continue rolling until you reach the edge of the nori.

Seal the Roll
Moisten the top edge of the nori with a little water to help seal the roll. Press gently to secure.

Slice the Roll
Using a sharp knife, slice the roll into bite-sized pieces, wiping the knife with a damp cloth between cuts for clean edges.
Serving

Garnish and Serve
Sprinkle sesame seeds on top of the rolls and serve with soy sauce and wasabi on the side.
