Preparing the Vegetables and Chicken

Marinate the Chicken
Cut the chicken breast into bite-sized pieces. In a bowl, combine the soy sauce, minced garlic, and grated ginger. Add the chicken pieces and marinate for at least 15 minutes.

Prepare the Vegetables
While the chicken is marinating, chop the bell peppers, carrots, and broccoli into small, bite-sized pieces.

Cook the Rice
In a medium saucepan, combine 1 cup of white rice, 2 cups of water, and 1 teaspoon of salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is fluffy and the water is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

Stir-Fry the Chicken and Vegetables
In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the marinated chicken and stir-fry until cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside. In the same skillet, add the chopped vegetables and stir-fry for about 4-5 minutes until tender-crisp. Return the cooked chicken to the skillet, mix well, and cook for an additional 2-3 minutes.
