Prepare the Rice

Rinse the Rice
Rinse 1 cup of white rice under cold water until the water runs clear to remove excess starch.

Cook the Rice
In a saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil over medium heat. Once boiling, reduce the heat to low, cover, and let simmer for 15-20 minutes until the rice is tender and water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.
Prepare the Chicken and Cashew Nuts

Cut the Chicken
Cut 500 grams of chicken breast into bite-sized pieces.

Marinate the Chicken
In a bowl, mix the chicken pieces with 1 tablespoon of soy sauce and let marinate for at least 10 minutes.

Toast the Cashews
In a dry skillet over medium heat, add 100 grams of cashew nuts and toast them for about 3-4 minutes until golden brown. Remove and set aside.
Cook the Chicken and Vegetables

Heat the Oil
In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat.

Cook the Chicken
Add the marinated chicken to the skillet and cook for about 5-7 minutes, stirring frequently, until the chicken is browned and cooked through.

Make the Sauce
In a small bowl, mix together 3 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of cornstarch, and 50 ml of water until smooth.
Combine and Serve

Combine the Ingredients
Pour the sauce over the chicken and vegetables in the skillet. Stir well to combine and cook for another 2-3 minutes until the sauce thickens.

Add Cashews
Finally, add the toasted cashew nuts and chopped green onions to the skillet. Stir to combine.

Serve the chicken with cashew nuts over a bed of fluffy white rice. Enjoy!
