Prepare the Chicken
In a skillet, heat 2 tablespoons of vegetable oil over medium heat. Add the diced chicken breast and cook until browned and cooked through, about 5–7 minutes. Season with salt and black pepper. Remove from heat and set aside.

Prepare the Egg Mixture
In a mixing bowl, beat the eggs and add the chopped green onions, bean sprouts, and cooked chicken. Stir in 2 tablespoons of soy sauce.

Cook the White Rice
Rinse the white rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15–20 minutes, or until all the water is absorbed. Remove from heat and let sit, covered, for 5 minutes.
Gravy Sauce

Prepare the Gravy Sauce
In a small saucepan, combine the chicken broth, soy sauce, sugar, and sesame oil. In a separate bowl, mix the cornstarch with 2 tablespoons of water until smooth. Add this to the saucepan over medium heat, stirring continuously until the sauce thickens, about 3–5 minutes.
