Preparing the Rice

Cook the Rice
In a medium pot, add 1 cup of white rice and 2 cups of water. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and let it simmer for about 18 minutes or until the water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes, then fluff with a fork.
Cooking the Beef and Mushrooms

Prepare the Beef
Slice the beef sirloin into thin strips against the grain. Season the beef with salt and black pepper.

Prepare the Mushrooms
Clean the mushrooms with a damp cloth and slice them thinly.

Make the Sauce
In a small bowl, combine the soy sauce, minced garlic, grated ginger, cornstarch, and water. Stir until smooth and set aside.

Cook the Beef
Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the beef strips and sauté for about 3-4 minutes until browned. Remove the beef from the skillet and set aside.
