Method
Prepare Sushi Rice

Rinse the Rice
Place sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear.

Cook the Rice
In a rice cooker or pot, combine rinsed sushi rice and 2.5 cups of water. Cook according to your rice cooker's instructions or bring to a boil, then reduce heat, cover, and simmer for 20 minutes until all water is absorbed.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt. Once the rice is cooked, transfer it to a large bowl, and gently fold in the vinegar mixture. Allow it to cool to room temperature.

Prepare Cucumber
Slice the cucumber into thin strips, about 1/4 inch wide.

Prepare Crab Sticks
If using whole crab sticks, shred them into thin strips.

Make Tamagoyaki (Japanese Omelette)
In a bowl, beat the eggs. Heat a non-stick skillet over medium heat, add a little oil, and pour in a thin layer of beaten eggs. Cook until set, then roll the omelette, pushing it to one side of the pan. Repeat with remaining egg, stacking the omelette. Once cooked, slice into strips.

Prepare Spicy Tuna
Mix tuna with your choice of spicy mayo or sriracha for the spicy tuna filling.
Assemble the Sushi Rolls

Lay Out Nori
Place a sheet of nori on a bamboo sushi mat, shiny side down.

Spread the Rice
Wet your hands to prevent sticking, take a handful of sushi rice, and spread it evenly over the nori, leaving a small border at the top.

Add Fillings
Lay cucumber strips, crab stick strips, and tamagoyaki along the bottom edge of the rice-covered nori. Add a layer of spicy tuna and jalapeños on top.

Roll the Sushi
Using the sushi mat, roll the nori away from you, applying gentle pressure to form a tight roll. Seal the edge with a little water.

Cut the Roll
With a sharp, wet knife, slice the roll into 8 equal pieces. Wipe the knife between cuts for clean slices.

Garnish (Optional)
Sprinkle sesame seeds on top if desired and serve with wasabi and soy sauce.
