Prepare Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine-mesh sieve and rinse it under cold running water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed sushi rice and 1.25 cups of water. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is tender and the water is absorbed.

    Season the Rice

    In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, remove it from heat and let it sit covered for 10 minutes. Transfer the rice to a large bowl, and gently fold in the vinegar mixture using a wooden spatula. Allow it to cool to room temperature.

    Slice the Tuna

    Using a sharp knife, slice the sushi-grade tuna into thin, even pieces about 1/4 inch thick. Ensure your knife is wet to minimize sticking.

Assemble Nigiri

    Shape the Rice

    Wet your hands with water to prevent sticking. Take a small amount of seasoned sushi rice (about 2 tablespoons) and shape it into an oval mound.

    Top with Tuna

    Place a slice of tuna on top of each rice mound. Press gently to adhere the tuna to the rice.

    Serve the nigiri on a plate with soy sauce, wasabi, and pickled ginger on the side for dipping.
