Sushi Rice

Method

Prepare Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until the water is absorbed. Remove from heat and let it sit, covered, for 10 minutes.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

Prepare Shrimp

    Cook the Shrimp

    Bring a small pot of salted water to a boil. Add the shrimp and cook for 2-3 minutes, or until they turn pink and opaque. Drain and immediately place in ice water to stop the cooking process. Drain again and pat dry.

    Season the Shrimp

    Toss the cooked shrimp with lemon juice and sprinkle with salt. Set aside.

Assemble Nigiri

    Form Rice Balls

    Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and form it into an oval shape.

    Add Shrimp

    Place one shrimp on top of each rice ball, gently pressing it down to secure it.

    Serve with Condiments

    Serve the shrimp nigiri with wasabi and soy sauce on the side. Optionally, garnish with small strips of nori if desired.
