Place the sushi rice in a fine-mesh sieve and rinse under cold water until the water runs clear. This removes excess starch.

In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over medium heat, then reduce to low, cover, and simmer for about 18 minutes or until the water is absorbed and the rice is tender.

In a small bowl, mix rice vinegar, sugar, and salt. Heat in the microwave for about 30 seconds until the sugar dissolves. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture.
