Method

Prepare Potato Hash

  1. 1

    Cook the Potatoes

Dice the potatoes into small cubes. Heat olive oil in a skillet over medium heat. Add the potatoes, diced onion, and bell pepper. Season with salt and pepper to taste. Cook, stirring occasionally, until the potatoes are golden and tender, about 15-20 minutes.

Cook the Eggs

  1. 2

    Fry the Eggs

In another skillet, melt butter over medium heat. Crack the eggs into the skillet and cook to your desired doneness (sunny-side up, over-easy, etc.). Season with salt and pepper.

Prepare the Meat

  1. 3

    Cook the Meat

In the same skillet used for the eggs, cook bacon until crispy. Alternatively, cook sausage links according to package instructions.

Toast the Bread

  1. 4

    Toast

While the eggs and meat are cooking, toast the slices of bread in a toaster or on a skillet until golden brown.

Serve

  1. 5

    Assemble the Plate

On a plate, serve the cooked potato hash, the eggs, your choice of meat, and the toasted bread.
