    Prepare the Crust

    Preheat the oven to 350°F (175°C). In a bowl, mix the graham cracker crumbs, sugar, and melted butter until combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and let cool.

    Prepare the Cheesecake Filling

    In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar and beat until combined. Add the sour cream, vanilla extract, and heavy cream, mixing until smooth. Add eggs one at a time, mixing on low speed until just combined. Do not overmix.

    Assemble the Cheesecake

    Pour the cheesecake filling over the cooled crust. Bake in the preheated oven for 50-60 minutes or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.

    Chill the Cheesecake

    After cooling, refrigerate the cheesecake for at least 4 hours or overnight for best results.

    Before serving, drizzle the top with chocolate fudge sauce and caramel sauce. Sprinkle chopped pecans on top.
