    Prepare the Potatoes

    Boil the fingerling potatoes in salted water until tender, about 15-20 minutes. Drain and set aside to cool.

    Cook the Green Beans

    In the same pot, blanch the green beans in boiling water for 3-4 minutes until bright green and tender-crisp. Drain and immediately plunge into ice water to stop cooking. Set aside.

    Sear the Tuna

    Season the ahi tuna steak with salt and pepper. Heat a skillet over high heat and add a little oil. Sear the tuna for about 1-2 minutes on each side for rare. Remove from heat, let cool slightly, then slice thinly.

    Prepare the Salad

    In a large bowl, combine the pea shoots, green beans, sliced potatoes, grape tomatoes, capers, and marinated olives.

    Add Tuna and Dressing

    Top the salad with the sliced tuna. Drizzle with herb red wine vinaigrette and toss gently to combine.
