    Prepare the Chicken

    Preheat your oven to 425°F (220°C). Pat the chicken breasts dry with paper towels, then rub them with olive oil, salt, and black pepper.

    Roast the Chicken

    Place the chicken breasts on a baking sheet skin side up. Roast in the preheated oven for about 35-40 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is crispy.

    Prepare the Carrots

    While the chicken is roasting, bring a pot of water to a boil. Add the sliced carrots and cook for about 5 minutes, then drain.

    Glaze the Carrots

    In a skillet over medium heat, combine the honey and thyme. Add the drained carrots and toss until they are well-coated and heated through, about 5 minutes.

    Make the Pan Jus

    Once the chicken is done roasting, remove it from the oven and let it rest. Pour the drippings from the baking sheet into a small saucepan, add a bit of water if needed, and heat over medium heat until slightly thickened.

    Serve the roasted chicken with a side of creamy mashed potatoes, honey-thyme glazed carrots, and drizzle the pan jus over the chicken.
