Method
Preparation Instructions
- 1
Prepare the Cake
Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- 2
Mix Dry Ingredients
In a bowl, whisk together flour, baking powder, and salt.
- 3
Cream Butter and Sugar
In a large bowl, cream the butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- 4
Combine Mixtures
Gradually add the dry ingredients to the wet mixture, alternating with the pistachio paste, until well combined.
- 5
Bake the Cakes
Divide the batter evenly between the prepared pans and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- 6
Cool the Cakes
Allow the cakes to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
- 7
Prepare the Ricotta Cream
In a separate bowl, whip the heavy cream until stiff peaks form. In another bowl, mix ricotta cheese with powdered sugar until smooth. Gently fold in the whipped cream until fully incorporated.
- 8
Layer the Cake
Place one cake layer on a serving plate. Spread a layer of ricotta cream on top, then sprinkle with chopped hazelnuts. Place the second cake layer on top and repeat with another layer of ricotta cream and hazelnuts.
- 9
Finish the Cake
Top the cake with any remaining ricotta cream and garnish with additional chopped hazelnuts and powdered sugar before serving.
