Meatballs Preparation

Make the Meatballs
In a large bowl, combine ground beef, ground pork, breadcrumbs, egg, minced garlic, cilantro, soy sauce, salt, and pepper. Mix until well combined. Form into meatballs, approximately 1 inch in diameter.

Cook the Meatballs
In a skillet over medium heat, cook the meatballs for about 10-12 minutes, turning occasionally, until browned and cooked through. Remove and set aside.
Pickled Vegetables Preparation

Pickle the Vegetables
In a medium bowl, combine julienned carrots and daikon radish. In a separate bowl, whisk together rice vinegar, sugar, and salt until dissolved. Pour the mixture over the vegetables and let them pickle for at least 30 minutes.
Spicy Red Pepper Aioli Preparation

Make the Aioli
In a small bowl, mix together mayonnaise, red pepper flakes, minced garlic, and lemon juice. Stir until well combined and set aside.

Assemble the Bahn Mi
Preheat the oven to 350°F (175°C). Slice the baguette in half and lightly toast it in the oven. Spread the spicy red pepper aioli on the inside of the baguette, add the cooked meatballs, top with pickled vegetables, and sprinkle with the mixed cheeses. Return to the oven for about 5-7 minutes until the cheese is melted.
