    Peel and dice the potatoes into small cubes. Boil in salted water for about 10 minutes until tender, then drain and set aside.

    In a large skillet, melt 1 tablespoon of butter over medium heat. Add diced onion and red bell pepper, sauté until softened, about 5 minutes.

    Add the boiled potatoes and chopped pastrami to the skillet. Season with salt and black pepper. Cook for 8-10 minutes, stirring occasionally, until everything is crispy and heated through.

    In a saucepan, melt the remaining tablespoon of butter over medium heat. Stir in the flour and cook for 1 minute. Gradually whisk in the heavy cream until smooth. Add mustard and cheese, stirring until melted and creamy. Season with salt and pepper.
