Cooking the Fish

    Blacken the Mahi Mahi

    Heat olive oil in a skillet over medium-high heat. Season the mahi mahi fillets with blackening seasoning on all sides. Once the oil is hot, add the fillets and cook for about 3-4 minutes on each side, or until the fish is cooked through and has a blackened crust. Remove from skillet and let rest.

Preparing Pico de Gallo

    Make the Pineapple Pico de Gallo

    In a bowl, combine diced pineapple, red onion, cilantro, jalapeño, and lime juice. Mix well and set aside to let the flavors meld.

Making Lime Crema

    Prepare Lime Crema

    In a small bowl, whisk together sour cream, lime juice, and salt until smooth. Adjust seasoning to taste.

Assembling Tacos

    Assemble the Tacos

    Warm the corn tortillas in a skillet or microwave. To each tortilla, add a piece of blackened mahi mahi, a handful of jicama, a spoonful of pineapple pico de gallo, and a drizzle of lime crema. Garnish with fresh cilantro.
