Method

Fried Chicken Preparation

  1. 1

    Marinate the Chicken

In a bowl, combine buttermilk, salt, paprika, garlic powder, onion powder, and black pepper. Add chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

  2. 2

    Coat the Chicken

In a separate bowl, mix together flour and cornstarch. Remove chicken from buttermilk marinade and dredge in the flour mixture, shaking off excess.

  3. 3

    Fry the Chicken

Heat vegetable oil in a large skillet over medium-high heat. Fry chicken thighs for about 6-8 minutes per side or until golden brown and cooked through. Drain on paper towels.

Jalapeno Coleslaw Preparation

  1. 4

    Mix the Slaw

In a large bowl, combine shredded cabbage, carrot, minced jalapeno, mayonnaise, apple cider vinegar, sugar, and salt. Toss until well combined and set aside.

Spicy Ranch Aioli Preparation

  1. 5

    Make the Aioli

In a bowl, whisk together mayonnaise, ranch seasoning mix, and hot sauce until smooth. Adjust seasoning to taste.

Assembly

  1. 6

    Assemble the Sandwich

Toast brioche buns until golden. Spread spicy ranch aioli on the bottom bun, add fried chicken, top with jalapeno coleslaw, add pickles if desired, and finish with the top bun.
