    Prepare the Fingerling Potatoes

    Boil the fingerling potatoes in salted water until tender, about 15 minutes. Drain and let them cool before slicing them in half.

    Blanch the Green Beans

    In a pot of boiling water, blanch the green beans for 3-4 minutes until bright green and tender-crisp. Drain and immediately transfer to an ice bath to stop cooking.

    Sear the Ahi Tuna

    Heat a skillet over high heat and sear the ahi tuna for about 1-2 minutes on each side until the outside is browned but the inside remains rare. Remove from heat and let it rest before slicing thinly.

    Prepare the Boiled Eggs

    Boil the eggs for about 8-10 minutes. Once boiled, cool them in ice water, peel, and cut them in half.

    Assemble the Salad

    On a large platter, arrange the pea shoots, green beans, sliced fingerling potatoes, grape tomatoes, capers, and marinated olives. Top with sliced seared ahi tuna and halved boiled eggs.

    Drizzle the herb red wine vinaigrette over the salad before serving.
