Beef Preparation

    Cook the Filet

    Preheat a skillet over medium-high heat. Season the filet with salt and pepper on all sides. Add olive oil to the skillet and sear the filet for about 4-5 minutes on each side for medium-rare. Remove from heat and let rest for 5 minutes before slicing.

Fingerling Potatoes Preparation

    Roast the Potatoes

    Preheat the oven to 400°F (200°C). Halve the fingerling potatoes and toss them with melted butter, minced garlic, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden and tender. Garnish with fresh parsley before serving.

Asparagus Preparation

    Sauté the Asparagus

    In a skillet, heat olive oil over medium heat. Add the trimmed asparagus, season with salt and pepper, and sauté for about 5-7 minutes until tender-crisp.

Shallot Demi Preparation

    Make the Demi

    In the same skillet used for the filet, add diced shallots and cook until softened. Pour in red wine and beef stock, scraping up any browned bits. Simmer until reduced by half, then whisk in butter, salt, and pepper to finish.
