Cooking Instructions
- 1
Prepare the Marinade
In a small bowl, combine the olive oil, minced garlic, chopped fresh rosemary, salt, black pepper, and lemon juice. Mix well until all ingredients are combined.
- 2
Marinate the Pork Tenderloin
Place the pork tenderloin in a resealable plastic bag or a shallow dish. Pour the marinade over the pork, making sure it is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight for best flavor.
- 3
Preheat the Oven
Preheat your oven to 400°F (200°C) while the pork is marinating.
- 4
Sear the Pork Tenderloin
In an oven-safe skillet, heat a little olive oil over medium-high heat. Remove the pork from the marinade, letting excess drip off, and sear the tenderloin for about 2-3 minutes on each side until golden brown.
- 5
Roast the Pork Tenderloin
Transfer the skillet to the preheated oven and roast the pork tenderloin for about 20-25 minutes, or until a meat thermometer reads 145°F (63°C).
- 6
Rest and Slice
Once cooked, remove the pork from the oven, cover loosely with aluminum foil, and let it rest for 5-10 minutes. After resting, slice the pork into medallions and serve.
