Season the Chicken
Pat the chicken breast dry with paper towels. Season both sides with salt and black pepper.

Cook the Chicken
In a skillet, heat olive oil over medium heat. Add the seasoned chicken breast and cook for about 6-7 minutes on each side, or until the chicken is fully cooked through and the internal temperature reaches 165°F (75°C). Remove from the skillet and let it rest.

Cook the Bacon
In the same skillet, add the bacon slices and cook until crispy, about 3-4 minutes per side. Remove and drain on paper towels.
Assemble the Sandwich

Toast the Pretzel Bun
Lightly toast the pretzel bun in a toaster or on a skillet until golden brown.

Layer the Ingredients
On the bottom half of the toasted pretzel bun, place the cooked chicken breast. Top with crispy bacon, an onion ring, and a slice of pepper jack cheese.

Add Spicy Mayo
Spread the spicy mayo on the top half of the pretzel bun and place it on top of the sandwich.

Cut the sandwich in half if desired, and serve immediately while warm.
