Method

Grilling the Salmon

1

Prepare the Marinade

In a small bowl, combine olive oil, lemon juice, garlic powder, salt, and black pepper. Mix well.

2

Marinate the Salmon

Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.

3

Preheat the Grill

Preheat your grill to medium-high heat (about 375°F to 400°F).

4

Grill the Salmon

Remove the salmon from the marinade and place it skin-side down on the grill. Grill for 6-8 minutes on each side, or until the fish flakes easily with a fork.

Preparing the Vegetable Side

5

Slice the Vegetables

Cut the zucchini and bell pepper into bite-sized pieces.

6

Toss with Oil and Seasoning

In a bowl, toss the vegetables with olive oil, salt, and black pepper.

7

Grill the Vegetables

Place the vegetables on the grill alongside the salmon and grill for about 5-7 minutes until tender and slightly charred.

Making the Salad

8

Prepare the Salad Ingredients

Wash and dry the mixed greens, halve the cherry tomatoes, and slice the cucumber.

9

Combine the Salad

In a large bowl, combine the salad greens, cherry tomatoes, and cucumber.

10

Dress the Salad

In a small bowl, whisk together olive oil, balsamic vinegar, salt, and black pepper. Drizzle over the salad just before serving.
