Method
Prepare the Chips
- 1
Peel and Cut Potatoes
Peel the potatoes and cut them into thick chips, about 1 inch wide.
- 2
Soak the Chips
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.
- 3
Dry the Chips
Drain the potatoes and pat them dry with a clean kitchen towel.
- 4
Preheat Oil
In a large pot or deep fryer, heat the vegetable oil to 320°F (160°C).
- 5
Fry the Chips (First Fry)
Carefully add the chips to the hot oil in batches and fry for about 5-7 minutes until they are soft but not colored. Remove and drain on paper towels.
- 6
Increase Oil Temperature
Increase the oil temperature to 375°F (190°C) for the second fry.
- 7
Fry the Chips (Second Fry)
Fry the chips again in batches for about 3-4 minutes until they are golden brown and crispy. Drain on paper towels and sprinkle with salt.
Prepare the Fish
- 8
Make the Batter
In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and thick.
- 9
Preheat Oil for Frying Fish
In a separate pot or deep fryer, heat the vegetable oil to 375°F (190°C).
- 10
Coat the Fish
Dip each fish fillet into the batter, ensuring it is evenly coated.
- 11
Fry the Fish
Carefully place the battered fish fillets into the hot oil and fry for about 4-5 minutes, or until golden brown and cooked through. Remove and drain on paper towels.
