Preparation
Prepare the Vegetables
Wash and dry the lettuce. Chop it into bite-sized pieces. Dice the tomato and set aside. Slice the bell pepper and onion into thin strips.
Cooking
Sauté the Peppers and Onions
In a large skillet, heat a tablespoon of olive oil over medium heat. Add the sliced bell pepper and onion. Sauté for about 5-7 minutes until they are tender and slightly caramelized. Season with salt and pepper to taste.
Assembly
Assemble the Fajita Wraps
Lay the flour tortillas flat on a clean surface. Start by adding a generous amount of sautéed peppers and onions to the center of each tortilla. Top with chopped lettuce, diced tomato, a scoop of salsa, and a sprinkle of shredded cheddar jack cheese.
Wrap the Tortillas
Fold in the sides of the tortilla, then roll it tightly from the bottom up to enclose the filling. Repeat with the remaining tortillas.
Serving
Serve
Cut the wraps in half diagonally and serve immediately with extra salsa on the side if desired.
