Preparation
Prepare the Tater Tots
Preheat your oven to 425°F (220°C). Spread the tater tots on a baking sheet in a single layer and bake for 20-25 minutes, or until golden brown and crispy. Stir halfway through for even cooking.
Cook the Ground Brisket
In a large skillet over medium heat, add the ground brisket. Use a wooden spoon to break it apart as it cooks. Season with salt, black pepper, garlic powder, and onion powder. Cook until well browned and fully cooked, about 8-10 minutes.
Assembling the Wrap

In a large mixing bowl, combine the cooked ground brisket, baked tater tots, cheddar jack cheese, and queso. Mix until well combined.
Fill the Tortillas
Lay a flour tortilla flat on a clean surface. Spoon a generous portion of the filling mixture onto the center of the tortilla. Be careful not to overfill.
Wrap the Tortilla
Fold the sides of the tortilla inward, then roll it from the bottom up to encase the filling. Repeat with the remaining tortillas.

In the same skillet used for the brisket, place the wraps seam-side down. Toast over medium heat for about 2-3 minutes until golden brown. Flip and toast the other side for another 2-3 minutes.
Serving
Serve the Wraps
Cut each wrap in half and serve warm. Optionally, top with sour cream, chopped green onions, and sliced jalapeños.
