Cake Preparation
Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water to create a double boiler. Stir occasionally until melted and smooth. Remove from heat and let cool slightly.
Mix Sugar and Eggs
In a separate mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is pale and slightly thickened.
Add Flour
Sift the all-purpose flour over the chocolate mixture and gently fold it in using a spatula until just combined. Be careful not to overmix.
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.
Bake
Place the ramekins in the preheated oven and bake for 12-14 minutes, or until the edges are firm but the center is soft.
Cool and Serve
Remove the ramekins from the oven and let them cool for 1 minute. Carefully run a knife around the edges to loosen the cakes, then invert them onto individual plates. Serve immediately with a scoop of vanilla ice cream on the side.
