Caesar Dressing
Method
Preparing the Salad
Wash and Tear Lettuce
Wash the romaine lettuce thoroughly under cold water. Dry the leaves using a salad spinner or by patting them down with a clean kitchen towel. Tear the lettuce into bite-sized pieces and place them in a large salad bowl.
Add Croutons and Cheese
Add the croutons to the bowl of torn romaine lettuce. Grate or shave the Parmesan cheese over the top of the salad, ensuring even distribution.
Making the Caesar Dressing
Combine Ingredients
In a medium bowl, mash the anchovy fillets and minced garlic clove together with a fork to form a paste. Add the Dijon mustard, Worcestershire sauce, and lemon juice to the bowl, and whisk until combined.
Emulsify Dressing
While whisking continuously, slowly drizzle in the olive oil to emulsify the dressing until it becomes creamy. Season with salt and black pepper to taste.
Assembling the Salad
Dress the Salad
Pour the prepared Caesar dressing over the salad base in the large bowl. Toss the salad gently until all the ingredients are evenly coated with the dressing.
Serve
Serve the Caesar salad immediately, garnished with additional Parmesan cheese, if desired.
