    Prepare the Mixture

    In a large mixing bowl, combine the finely chopped jalapeños, crumbled bacon, cream cheese, and shredded cheddar cheese. Mix until well combined.

    Combine Dry Ingredients

    In a separate bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper.

    Combine Mixtures

    Gradually add the dry ingredients to the cheese and jalapeño mixture, stirring gently until just combined. Add the beaten egg and milk, mixing until smooth.

    Fry the Fritters

    Heat vegetable oil in a deep skillet or frying pan over medium heat. Once hot, drop spoonfuls of the batter into the oil. Fry until golden brown on each side, about 3-4 minutes per side.

    Remove the fritters from the oil and place them on paper towels to drain excess oil. Serve hot with raspberry pepper jelly.
