Method

Preparation

  1. 1

    Prepare Chicken Wings

Preheat your grill or smoker for indirect cooking at a temperature of 250°F (120°C). Toss the chicken wings in olive oil, salt, and black pepper. Optional: Add charcoal for a smoky flavor.

  2. 2

    Make Smoked Chili Buffalo Sauce

In a saucepan, melt the unsalted butter over medium heat. Stir in the hot sauce, smoked paprika, garlic powder, chili powder, honey, and lime juice. Bring to a simmer and remove from heat.

  3. 3

    Make Alabama Ranch

In a bowl, mix together mayonnaise, sour cream, buttermilk, dried dill, garlic powder, onion powder, and salt. Adjust seasoning to taste.

  4. 4

    Cook Chicken Wings

Place the wings on the grill or smoker and cook for about 1 hour, flipping halfway through, until crispy and cooked through.

  5. 5

    Toss in Sauce

Remove wings from the grill, toss them in the Smoked Chili Buffalo Sauce until fully coated.

  6. 6

    Serve

Serve the wings hot with Alabama Ranch for dipping and celery sticks on the side.
