Caramelize the Onions
Heat a skillet over medium heat and add 1 tablespoon of butter. Slice the onion and add it to the skillet. Sprinkle with salt and pepper. Cook, stirring occasionally, until the onions are soft and golden brown, about 15-20 minutes. Remove from heat and set aside.

Cook the Beef Patties
In the same skillet, add the remaining tablespoon of butter and increase the heat to medium-high. Season the Angus beef patties with salt and black pepper. Cook the patties for about 3-4 minutes on each side, or until they reach your desired doneness. Place a slice of Swiss and American cheese on each patty during the last minute of cooking to melt.

Assemble the Patty Melt
Spread spicy mayo on one side of each slice of sourdough bread. On two slices, layer the caramelized onions, followed by the cheese-topped patties. Top with the remaining slices of sourdough, mayo side down.

Serve
Remove from the skillet, slice in half, and serve hot with your choice of sides.
