Make the Crust
Preheat the oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then remove from oven and let cool.

Prepare the Filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add granulated sugar and sour cream, mixing until well combined. Add vanilla extract and beat in the eggs, one at a time, until just incorporated.

Bake the Cheesecake
Pour the filling over the cooled crust and spread evenly. Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

Chill
Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours, or overnight for best results.

Prepare the Topping
In a small bowl, mix fresh berries with powdered sugar and let sit for about 10 minutes.

Remove the sides of the springform pan. Top the cheesecake with the fresh berries and serve chilled.
