Method

Preparing the Pork Chops

    Make the Mustard Glaze

    In a bowl, mix together yellow mustard, brown sugar, apple cider vinegar, smoked paprika, salt, and black pepper until well combined.

    Marinate the Chops

    Coat the Duroc chops with the mustard glaze and let them marinate for at least 30 minutes.

    Smoke the Chops

    Preheat your smoker to 225°F (107°C). Place the marinated chops in the smoker and smoke for about 1.5 to 2 hours or until the internal temperature reaches 145°F (63°C).

Preparing the Garlic Mashed Potatoes

    Cook the Potatoes

    Peel and chop the russet potatoes into cubes. Boil them in salted water until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add minced garlic, butter, milk, salt, and black pepper. Mash until creamy and smooth.

Preparing the Sautéed Spinach

    Sauté the Spinach

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add fresh spinach and cook until wilted, about 3-4 minutes. Season with salt and black pepper to taste.

    Serve the smoked pork chops alongside a generous portion of garlic mashed potatoes and sautéed spinach for a delicious meal.
