    Prepare the Pork

    Rub the pork shoulder with your favorite spices (salt, pepper, garlic powder, paprika) and let it sit for at least 1 hour or overnight in the refrigerator for best results.

    Smoke the Pork

    Preheat your smoker to 225°F (107°C). Place the pork shoulder in the smoker and smoke for about 8-10 hours, or until the internal temperature reaches 195°F (90°C).

    Shred the Pork

    Once the pork is done, remove it from the smoker and let it rest for 30 minutes. Then shred the meat with two forks.

    Assemble the Sandwich

    Toast the brioche buns and layer with pulled pork, a generous amount of hickory BBQ sauce, sliced onion, and bread & butter pickles.
