    Prepare the Rice

    In a medium saucepan, combine basmati rice, water, and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender and water is absorbed. Fluff with a fork and set aside.

    Sauté the Spinach

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add fresh spinach and cook until wilted, about 2-3 minutes. Season with salt and pepper. Remove from the skillet and set aside.

    Grill the Shrimp

    In the same skillet or on a grill, heat remaining olive oil over medium-high heat. Season shrimp with salt, pepper, and ancho chili powder. Grill or sauté shrimp for 2-3 minutes on each side until they are pink and opaque.

    Make the Ancho Butter Sauce

    In a small saucepan, melt butter over low heat. Whisk in remaining ancho chili powder until smooth. Remove from heat.

    Plate the Dish

    On each plate, serve a portion of buttered basmati rice, top with sautéed spinach, and place grilled shrimp on top. Drizzle with ancho butter sauce before serving.
