Preheat the oven to 425°F (220°C). Line two baking sheets with parchment paper.

Place eggplant halves cut-side down on one baking sheet. Roast for 25–30 minutes until very soft and lightly caramelized. Remove, let cool slightly, then scoop out flesh into a sieve set over a bowl to drain for 10 minutes; reserve skins if you like decorative strips for lining (optional).

While eggplant roasts, core and quarter the red bell pepper and slice the zucchini into 1/4-inch rounds. Toss with remaining 1 tbs olive oil, 1 tsp kosher salt and 1/2 tsp black pepper. Spread on the second baking sheet and roast 12–15 minutes until tender and edges char slightly. Let cool.

Once cooled, slice roasted vegetables into long thin strips roughly the width of your terrine mold (about 1–1.5 inches wide) so they will layer neatly.

If using gelatin for a firmer terrine, sprinkle 1 tsp gelatin over 2 tbs cold water in a small bowl and let sit 5 minutes to bloom. Warm gently (microwave 8–10 seconds or over a double boiler) until liquid but not hot, then whisk into the ricotta until fully incorporated.

In a mixing bowl combine 2 cups ricotta, 1 tbs grated parmesan, 2 tbs chopped basil, 1 tbs chopped parsley, 1 tsp lemon zest, 1 minced garlic clove, 1 tsp salt and 1/2 tsp black pepper. Stir until smooth and taste-adjust seasoning.

If mixture seems too loose (and you prefer a sliceable terrine), chill 20–30 minutes so it firms slightly before assembling.

Line a 9x4-inch (or similar small loaf) terrine mold or loaf pan with plastic wrap leaving an overhang to cover the top. If you reserved eggplant skins, press them against the sides for a decorative stripe; otherwise line with strips of roasted eggplant to cover bottom and sides, letting some overhang for closure.

Spread a thin layer (about 1/3 cup) of the ricotta mixture evenly over the bottom eggplant layer using an offset spatula. Gently press a layer of roasted vegetable strips (pepper, zucchini, and eggplant) in a single layer, trimmed to fit the mold.

Add another 1/2 cup ricotta layer, smooth, and if using, scatter a thin ribbon of tomato concassé in the center before adding the next vegetable layer.

Repeat layering (vegetables then ricotta) until the mold is filled, finishing with a ricotta layer. Use the overhanging eggplant or plastic wrap to press and seal the top. Place a weighted cutting board or a small baking sheet on top and refrigerate for at least 4 hours, preferably overnight, to set.

To serve, remove weight and lift terrine from mold using the plastic wrap. Invert onto a cutting board, peel away wrap and slice with a sharp serrated knife dipped in hot water and wiped dry between slices for clean edges.

Arrange slices on a platter, drizzle lightly with 1 tbs olive oil, sprinkle toasted pine nuts if using, and garnish with fresh basil leaves.
