Cocktail

1. Chill glass

Place a martini or coupe glass in the freezer for 5–10 minutes or fill it with ice and cold water while you prepare the drink to thoroughly chill the glass.

2. Combine ingredients

In a mixing glass or shaker filled halfway with ice, add 2 oz Bimini gin, 0.5 oz La Copa seco vermouth, and 2 dashes of bitters.

3. Stir

Using a long bar spoon, stir the mixture for about 20–30 seconds (roughly 20–30 revolutions) until well chilled and slightly diluted. Stirring rather than shaking preserves clarity and smooth texture.

4. Prepare glass

If you chilled the glass with ice and water, discard the ice and water now and wipe the glass briefly if needed.

5. Strain

Double-strain (using the mixing glass pour and a fine mesh strainer if available) the chilled cocktail into the prepared martini or coupe glass to remove any small ice shards.

6. Garnish

Express the oils of a lemon twist over the drink by holding the twist over the glass and giving it a quick pinch, then rub the rim with the peel and drop it in. Alternatively, garnish with one green olive on a pick.

Serve

7. Serve immediately while cold. Recommend pairing with light salty snacks or olives.
