    Prepare glass

    Choose a highball or Collins glass. Fill the glass with large ice cubes to chill while you assemble the drink (about 1–2 minutes).

    Build the cocktail

    Discard any excess water from the chilled glass. Add 2 oz Calvados, 0.5 oz fresh lemon juice, 0.25 oz simple syrup, and 2 dashes of Angostura bitters directly into the glass over the ice.

    Top with tonic

    Gently pour 4 oz chilled tonic water down the side of the glass or over the back of a spoon to preserve effervescence. Stir very gently once with a bar spoon (1–2 slow rotations) to integrate without flattening the tonic.

    Garnish and serve

    Express the oils of a lemon twist over the surface by holding the twist skin-side down and giving it a quick squeeze, then drop it into the drink. Alternatively, float a thin apple slice on top. Serve immediately with a straw if desired.
